SCROLL DOWN FOR THE RECIPE

Dear fam,

I baked these cookies for my friends at FitBites Protein, who sent me a lot of protein powder to play with. They also asked me to create some content for them, and I gladly did, given they paid me fairly as a content creator. (I charged a recipe development fee and a posting fee.)

Now it’s not very easy to create a delicious cookie using protein powder; protein as you know is very hydrophilic. To prevent an overly dry dough, you must add extra liquid content, like a little cream or milk or an extra egg.

I added a full scoop of protein powder to the cookie dough and 1/2 scoop to the frosting. My cookies came out cakey, soft, and not a bit dry. My only qualm with the frosting is that it didn’t spread as smoothly as I’d like.

But other than that, out of my oven came stellar, delicious cookies that would rival those you find at Crumbl or Crave— the price of 9 homemade cookies for the price of 1 Crumbl or Crave cookie (not exaggerating too much here).

If you don’t work out and want to skip the protein powder, feel free to do so. I’ll include the substitutions.

And as you can see from the photographs, garnish and decorate the cookies to your heart’s content. One cookie of mine had sesame seeds, haw flakes, and a White Rabbit candy. Another had blueberries and lemon. A third? A mix of sprinkles and Fruity Pebbles. A fourth is with Lucky Charms marshmallows.

I had so much fun crafting these cookies this afternoon and developing the recipe, and I’m so happy to share it here!!
