Filipino Double Buddy Bread Recipe

while watching contestants mess up their macarons on season 10 of MasterChef, Jake mentioned how a specific set of puffy, fat macarons reminded him of double-buddy or Lambingan bread, a favorite treat from his childhood in the Philippines. “It’s an everyman, everyday snack… a little less known than pan de sal,” he said. “They were big and filling.” His beautiful brown eyes glistened with nostalgia.
Double buddies involve two flatbreads, some circular, others oblong, with sandwiching a generous amount of sweetened margarine. Sometimes they are crispy like cookies. Jake kept raving about double buddies, hinting how much he loved the yellow and purple versions, knowing my penchant for recreating treats. I'm dedicated to healing and nurturing everyone's inner child, especially my husband's. And so this recipe was born: a homemade double buddy for my forever buddy. <3
Double buddy bread is also know as lambingan bread, double body, or buddy buddy bread. It is not-too-sweet and reminds me a little of pound cake more so than bread. The slightly salty filling is very memorable and delicious. I woke up this morning thinking there will be more for me downstairs, but they were all gone!!!
