have you heard about the viral stretchy yogurt from China, called Mamie’s, that is now available in New York City? Apparently, the yogurt is a little chewy and a little stretchy.
It turns out that stretchy yogurt isn’t something new, but you know how food trends go. They keep getting recycled, kind of like fashion trends. The Finns have a stretchy yogurt called villi, and the yogurt is like a runny slime. The texture is a natural result of the fermentation process of a particular strain of bacteria on milk.
Now, some on Reddit have tried Mamie’s yogurt and seem unimpressed. People are saying it looks and tastes just like regular yogurt. Reddit user, easymidas60, states, “Unimpressed. Just tasted like regular yogurt with fruit pieces in it.”
I guess it all boils down to clever marketing. Call yogurt or ice cream “stretchy” and the masses will go try the dish, post it on social media, and hype it up even more.

I won’t be flying to NYC any time soon, even though it’s one of my home cities, so I had to settle with making stretchy yogurt at home. What inspired me to make this recipe was all the Taiwanese milk mochis I had developed before.
I figured if you mix milk, Greek yogurt, and tapioca starch, heat it up, and mix it all together, you will end up with a yogurt that actually stretches like edible slime! And boy was I right!
See, I love having a science background. All the years as a doctor of physical therapy and bio-med major helped me think like a nerdy food scientist in the kitchen. My resulting stretchy yogurt recipe does not disappoint: it stretches like a dream, it’s perfectly tangy, it’s packed with protein, and it’s not too sweet. I’m already imagining all the flavors I can make with it, as well as all the toppings I can add to it!

Here is Kat Lieu’s easy 3-ingredient stretchy yogurt recipe!
Serves 2
Prep time is less than five minutes
Cook time: 2 minutes in the microwave
Storage: unknown, I ate it all, LOL!
Ingredients
1/2 cup Greek yogurt
1/2 cup milk
1/4 cup tapioca starch
2 tbsps sugar (optional)
toppings or food powders of your choice
Instructions
Mix the yogurt, milk, tapioca starch, and, if using, the sugar, in a microwave-safe bowl until well combined. Don’t over-mix. Cover the bowl with plastic wrap and poke holes in the wrap.
Microwave for 2 minutes.
Remove the bowl from the microwave carefully, as it will be hot. Mix until a uniform batter forms, using a rubber spatula. The stretchy yogurt gets smoother and stretchier as you mix it more and as it cools down.
Serve with your preferred toppings or food powders.
To make it vegan…
Now I haven’t tested it yet, but I figure you can swap out the Greek yogurt with vegan yogurt and the whole milk with plant-based milk to make this a vegan stretchy yogurt recipe. Let me know if you try it out!
