I don’t remember when I started cooking for my family because, for as long as I remember, I cooked. Steamed fish, roasted chicken, stir-fried veggies, and this dish, silky steamed eggs with dried shrimp, were always on rotation.
So trust me when I tell you this is the ultimate comfort food, one I’ve perfected for decades, and one you’d want to make again and again, especially on evenings when you’re bone-tired, you’re time-poor and need quick nourishment for the family, or just yourself.
A few magical ingredients here make this a super umami-rich dish, one that I will say definitively requires rice to temper the flavors. Finish it off with a drizzle of sesame oil, some chili crisp, and a puff of Formosa-brand pork floss.

This dish is so nostalgic and comforting. My mom loves it and I guess this is why I made it twice this week for dinner. Nearly 40, I’m still craving her approval. And meanwhile, my 10-year-old would lay a fart, and we’d all clap and say it smells like roses, LOL. Sometimes I wonder if in breaking that intergenerational trauma cycle I’m going a little overboard in spoiling my kid. But I digress. Onward to the recipe!
