Dear friend,
Born one day from my craving for cheesecake and cookies, this treat merges the best of both worlds. It’s a cookie, first and foremost, as it’s crispy on the outside and compact. But with one bite, you’ll get a melty and creamy center, and you’ll think, mmm, this is also cheesecake.
Lemon zest brings a refreshing flavor, pairing perfectly with ube. I just don’t feel any cheesecake is good without a bit of tang. Maybe it’s because I grew up in New York City, and the best cheesecakes are all a little tangy, like the ones from Junior’s.
Don’t like Ube, though? Fret not, my dear friend; sub it with matcha or pandan. Don’t like cookies and cream cookies? Sub them with graham crackers or Lotus Biscoff. Nothing is written in stone here, and my recipes are more like guides for you. After all, life’s too short not to bake what you want to make in the comforts of home.
